At the age of 17 Will Gilson began cooking at his family’s farm, The Herb Lyceum in Groton, before moving on to local favorites Oleana and The Garden at the Cellar. Seeking to expand the notion of dining, Gilson and Aaron Cohen founded Boston’s EAT, where they staged a pop-up restaurant in the summer of 2011 at Adrian’s in Truro. In 2012 he opened Puritan & Co. in Cambridge’s Inman Square, where he is currently chef and owner.
